Spinach Rounds

Spinach Rounds
Metric Ingredient Imperial
375 ml spinach, chopped & cooked 1 1/2 cup
125 ml cheddar cheese, grated 1/2 cup
1 egg, beaten 1
125 ml ripe olives, sliced 1/2 cup
2 ml salt 1/2 tsp
250 ml fine bread crumbs 1 cup
Once spinach is cooked, squeeze out all juice.

In a medium bowl, mix spinach, cheese, egg, olives and salt. Shape into balls. Roll thoroughly in crumbs. Place in greased baking pan. Bake in preheated 375 F (190 C) oven for 30 to 40 minutes.
