Cook carrots until tender crisp; set aside. Melt butter in saucepan. Add ginger and green onion. Saute a few minutes until soft. Add lemon juice and honey; simmer 2 minutes longer over low heat. Add carrots; coat well. Remove ginger. Serves 4 | |||||||||||||||||||||
