Ginger Carrots

Ginger Carrots
Metric Ingredient Imperial
500 g carrots, cut in julienne strips 1 lb
1 piece (1 in / 2.5 cm) fresh ginger, cut into 4 slices 1
50 ml butter 4 tbsp
40 ml green onion, finely chopped 3 tbsp
15 ml lemon juice 1 tbsp
15 ml honey 1 tbsp
Cook carrots until tender crisp; set aside. Melt butter in saucepan. Add ginger and green onion. Saute a few minutes until soft. Add lemon juice and honey; simmer 2 minutes longer over low heat. Add carrots; coat well. Remove ginger.
