Southwestern Bean Salad

Southwestern Bean Salad
Metric Ingredient Imperial
398 ml red kidney beans, rinsed & drained 14 oz
198 g kernel corn, drained 7 oz
1 small carrot, chopped 1
1/2 red pepper, chopped 1/2
125 ml celery, chopped 1/2 cup
2 green onion, chopped 2
5 ml parsley, diced 1 tsp
- DRESSING -
50 ml red wine vinegar 1/4 cup
15 ml vegetable oil 1 tbsp
1 clove garlic, minced 1
1 ml salt 1/4 tsp
- pepper to taste -
In a large serving bowl, gently toss beans, corn, carrot, red pepper, celery, onions and parsley.

In a separate bowl, whisk together vinegar, oil, garlic, salt and pepper.

Pour over salad and gently combine. Chill for 1/2 to 1 hour, occasionally stirring.

Serves 6
