One of the drawbacks of living in a city one might not think about is the lack of true night sky -- as dusk falls the street lights come on, and one never rally sees the stars. I have often said that Risotto is a universe: There are many, many variations on the theme, some whimsical (strawberry ristto), some earnestly earthy (risotto ai funghi porcini, some romantic (risotto ai gamberetti, with shrimp), and some frankly substantial (risotto al pollo, with chicken). Anything this good and this varied could not help but be noted outside Italy, and here are a few other risotto recipes that caught my eye: Enjoy!
