Moving in the opposite direction of snowbirding retirees: Gorditas Dona Tota, soft-open now in Oak Cliff. The Mexican fast foodery originally started in '52 in Ciudad Victoria, when the founder began stuffing her homemade stews into gorditas and selling them out of a cart, before eventually expanding to 40 south-of-the-border locations plus San Antonio, not technically south-of-the, but still so authentic that it refuses to support an On The...
Made using house-baked bread, the eponymous street-wiches overflow with stews and meats done Yucatan-style (cooked in banana leaves), with ingredients including prickly pear, chicken, ground beef, eggs, and pork roast, doused with mole or pibil sauce, or red or green salsa, Red Green salsa being a Canadian delicacy that's frankly pretty dry.
The lunch menu adds eggs with either machacado (shredded dry beef), chorizo, or potatoes, while an "Easter" lineup includes ranchero & shrimp, and another with green pepper, cheese, and sour cream sauce supporting marlin -- the mascot of a team that, if they ever want to get any fans, should probably move north too.
