to begin the evening! There will be a formal pairing session, navigated by Cameron
and our very own Jonathan White.

January Product Line-up
Charcuterie
Now that we're done with milking and cheesemaking for the winter, our attention
has turned towards making charcuterie. We have the following available at the farm
only:
Pate du Bois (venison, pork, cranberries, candy cap mushrooms, absinthe)
Haggis (pork, beef, oats, and malt whiskey!) Slice, fry and serve with leeks, or
the traditional "neeps and tatties", a/k/a turnips and potatoes.
Cheeses Available this month:
Cave-aged Cheddar-delicious veins!
Drumm-complex, with gooey edge
Baudolino shape, Endgame Flavor!
Jean-Louis Blue-intense and compelling!
We also have plenty of Jean-Louis and Frolic in stock.
Meats!
We have a limited selection of our own whey-fed pork and 100% grass-fed beef at
the farm store. We will be harvesting more pork soon, available mid-February.

On the Farm
We have plenty of fresh breads, glorious January cheeses (pictured above), meats,
and products from our farming friends including eggs, honey, and duck products.
Regular farm store hours are:
Monday, Wednesday, Thursday, Friday 12-6, Saturday & Sunday 9-5 (closed Tuesdays).
Farm Tours are held every Saturday and Sunday at 2, in all weather (except blizzards
and hurricanes!). It is always delightful to see our cows with their lovely winter
coats, sunning themselves on a bed of snow. And our first calf of the season has
arrived, so it's cow nursery time already! It is a peaceful sight, a world away
