I looked at my calendar for April and May on Friday…just preparing myself for the month and holy-wow…we are busy. May is always the busiest time of year for our family with activities, end of school year and the pool opening up for use here.
I’m exhausted just looking at it all, wondering how it’s all gonna get done and how I’m not going to lose my mind. It all just makes me want to take a nap!!!

But I actually already know how I’m going to keep control of dinner and feeding my 4 dudes every.single.night…despite having an activity every.single.night. for the next several weeks.
I try hard to keep our schedule light and balanced, but the next 2 months will be a short phase of ‘overload’ for our family. So I’m countering back by relying on these crazy, simple freezer meals.
See that set of 2 bags on top of this stack of dinners in the middle? It’s the Beef Fajita Skillet Dinner…and this is not an exaggeration…but it can be on your table in less than 10 minutes, once it’s thawed. 15 minutes, if you’re cooking it from partially frozen. Now THAT’S MY KINDA WEEKNIGHT DINNER.
(This saved me from hitting the drive thru earlier this week after basketball practice!)
