Heat oil in saucepan and saute peanuts until golden. Transfer to paper towel to drain. Place broccoli, onion and garlic in hot pan and cook, stirring occasionally, for 3 to 4 minutes. Add broth, wine, and soy sauce; bring to a boil. Stir in rice, return to boil, and remove from heat. Cover and set aside for about 5 minutes. Fluff with fork, transfer to serving bowl and garnish with peanuts. Serves 6 | ||||||||||||||||||||||||||||||
