Broccoli Rice

Broccoli Rice
Metric Ingredient Imperial
15 ml oil 1 tbsp
50 ml peanuts, coarsely chopped 1/4 cup
550 ml broccoli florets, chopped 2 1/4 cup
30 ml green onion, chopped 2 tbsp
15 ml garlic, minced 1 tbsp
250 ml chicken broth 1 cup
30 ml white wine 2 tbsp
20 ml soy sauce 1 1/2 tbsp
250 ml instant rice 1 cup
Heat oil in saucepan and saute peanuts until golden. Transfer to paper towel to drain.

Place broccoli, onion and garlic in hot pan and cook, stirring occasionally, for 3 to 4 minutes.

Add broth, wine, and soy sauce; bring to a boil. Stir in rice, return to boil, and remove from heat. Cover and set aside for about 5 minutes. Fluff with fork, transfer to serving bowl and garnish with peanuts.
