Green Bean Bundles

Green Bean Bundles
Metric Ingredient Imperial
50 ml crispy fine bread crumbs 1/4 cup
- salt & pepper to taste -
15 ml fresh parsley, finely chopped 1 tbsp
5 ml lemon peel, freshly grated 1 tsp
15 ml parmesan cheese, freshly grated 1 tbsp
350 g fresh green beans, trimmed 3/4 lb
30 ml olive oil 2 tbsp
8 slices prosciutto 8

In a small bowl; mix bread crumbs, salt and pepper.  Add parsley, lemon peel and cheese, tossing well.

In a large pot of boiling water; cook green beans until tender crisp.  Drain and cool beans.

Toss beans with olive oil and sprinkle with salt and pepper.  Divide beans into 4 equal bundles.  Arrange 2 slices of prosciutto so they slightly overlap each other.  Top with 1 bundle of beans.  Roll up carefully in prosciutto.  Place in lightly greased baking dish.  Slightly flatten tops of bundles.  Sprinkle with bread crumb mixture.

Bake in preheated 400 F (200 C) oven for 10 minutes or until thoroughly heated and crisp.
