Smokey Bacon & Tomato Dip

Smokey Bacon & Tomato Dip
Metric Ingredient Imperial
3 slices smoked bacon, chopped 3
1 clove garlic, minced 1
125 ml onion, chopped 1/2 cup
75 ml sundried tomatoes, blanched & thinly sliced 1/3 cup
1 can mixed beans, drained & rinsed (19 oz / 561 ml) 1
250 ml sour cream 1 cup
30 ml fresh parsley leaves 2 tbsp
250 ml tomatoes, seeded & diced 1 cup

In a large skillet; cook bacon, garlic, onion and sundried tomatoes until bacon is crisp.  Cool to room temperature.

In a food processor; combine bacon mixture, beans, sour cream and parsley.  Process until smooth.  Stir in tomatoes.  Place in serving bowl surrounded by fresh veggie slices or crackers.
