Peanut Butter Soup

Peanut Butter Soup
Metric Ingredient Imperial
15 ml vegetable oil 1 tbsp
2 onions, chopped 2
2 carrots, chopped 2
1 L vegetable broth 4 cup
50 ml white rice, uncooked 1/4 cup
126 ml smooth peanut butter 1/2 cup
2 ml hot pepper sauce 1/2 tsp
- salt to taste -

In a large saucepan; heat oil over medium heat.  Add onions and carrots.  Cook, stirring, until onion is soft, 8 to 10 minutes.  Add broth and bring to a boil.  Cover pot, lower heat to simmer and cook for 20 minutes.

Place soup in blender and blend until smooth.  Pour soup back in pot.  Add rice and cook, covered, for 15 minutes or until rice is soft.  Stir in peanut butter and then hot pepper sauce.  Season to taste.  Heat through and serve.
