Avocado Salad

Metric Ingredient Imperial 2 ripe avocados 2 3 ripe tomatoes 3 1/2 red onion, sliced 1/2 30 ml cilantro, chopped 2 tbsp 2 limes, halved 2 - salt - - olive oil -

Cut avocados in half, working around pit.  Separate the two halves.  Remove pit and scoop out halves with spoon.  Cut into wedges and pile in center of large platter. Cut tomatoes into wedges and arrange avocados.  Arrange onion slices over platter and sprinkle with cilantro.  Squeeze lime juice evenly over vegetables.  Season with salt and drizzle with oil. Servings: 4
