Now that Thanksgiving has passed, the holiday season is upon us, which means two things: food and shopping. So this week, I have some recipes to share and, if you scroll below the fold, some ideas for the health-conscious cook in your life.
This lean roast pork tenderloin with apples and cranberries makes a great family meal during the holiday season. The beauty of this dish, apart from being low in fat, is that it can be served in under an hour, which, for a Sunday dinner or special occasion, is pretty fast.
Move over pumpkin cake, here comes gingerbread! Fill your kitchen with the smell of gingerbread with this delicious, low-fat gingerbread cake. Dust with a little confectioners' sugar for a relatively guilt-free sweet treat this holiday season.
These chewy cranberry oatmeal cookies are a yummy holiday treat. Make a batch for your holiday party or give some to friends as a gift from your kitchen. These cookies do call for some butter, but will work well with an oil-butter blend, which contains much less saturated fat.
Sweet yet tart, these cranberry orange muffins are also light and tender -- qualities that are often missing in low-fat baked treats. Enjoy these muffins warm with your morning coffee, or serve a batch at a holiday brunch.
