We're having our first night in the 40's. I'm actually having to wear a jacket in the morning. I love this time of year. When I think of fall, I think of apples and all desserts made with apples. Here are some apple recipes for you.

Upside-Down Apple Cake
6 tablespoons butter
1 cup brown sugar
3 apples, peeled, cored and cut into 1/2 thick slices
2 teaspoon cinnamon, divided
1 teaspoon ground cloves, divided
1 teapsoon ground nutmeg, divided
one 18 ounce box yellow or white cake mix
1 cup apple juice or cider
2 eggs
3/4 cup apple butter or sauce
1/4 cup vegetable oil

Preheat oven to 350 degrees F. Lightly grease 9x13 pan. Melt 6 tablespoons butter in pan in oven. Remove pan from oven and sprinkle bottom with brown sugar. Place 1 teaspoon cinnamon, 1/2 teaspoon ground cloves and 1/2 teaspoon ground nutmeg into resealable plastic bag. Add apple slices and toss. Decoratively place apple slices over bottom of pan. Mix together cake mix, remaining spices, 1 cup apple juice, eggs, apple butter and vegetable oil. Once ingredients are wet, mix for 2 minutes. Carefully pour batter over apples in pan. Bake for 40 minutes or until tested done. Cool in pan on rack for 15 minutes. Dump onto serving platter. Serve warm with ice cream.
