Towne Stove and Spirits
Three-bar culinary collab lands at Hynes
900 Boylston St, at Gloucester; Back Bay; 617.247.0400
One way to ensure a steady stream of bar business is to strategically put it somewhere with a captive audience, like a train station, or an airport, or, perhaps most lucratively, an all-women's prison in Framingham. Trying their luck with a convention center, Towne Stove and Spirits, opening tomorrow.
The latest addition to the resplendent Hynes Convention Center, this culinary collab from Lydia Shire/Jasper White is a 15,000sqft, three-bar temple to imbibing featuring two-floors, multiple "choose-your-own-vibe" dining areas, an expansive patio, two stuffed cocks mounted in a fight, an illuminated resin bar with its own light-up bar robot, and a giant glass-walled exposed kitchen with a vintage copper Chambers stove, but not a Tom Chambers stove, since those are only good for jams. Old fashioned cocktails include the Iced Harvester (orange vodka, dry vermouth, orange blossom water, bitters); Race Day (1792 Ridgemont Reserve Bourbon, Cointreau, egg white); and the cucumber vodka'd Gypsy Dancer that's mixed w/ honey and aloe, and served shaken, though that's just a ploy to distract you as it steals your wallet. Global grub includes Russian-spiced prime rib roast/steak served w/ a sauce cart; Chinese pig chop w/ fried milk & wuxi pork riblets; razor clams a la plancha in a Basque 'piment' oil; and a hot buttered lobster roll done Connecticut-style (so... it received multiple illegal texts from Jim Calhoun?).
TSS also offers more casual eats like a ground sirloin/short rib burger, and wood-fired pizzas to accompany a solid selection of homegrown suds on draft including Mercury Brewing's Clown Shoes Black IPA, Jack D'Or "Saison Americain", and Cisco's Captain Swain's "Extra Stout", which also happens to be the best way to survive Framingham.
