Today we took Fred to the abattoir--he thought he was going to Dorney Park. After
a smooth trailer ride, he hopped off the trailer, through the wooden doors and into
Eternity.
The cacass looks great--808 lbs hanging (that's pretty big), with enough fat cover
that we can hang it for two weeks, which will greatly improve texture and flavor.
We expect to be able to fill orders on Wednesday, October 26th.

Each "share" purchased will entitle you to a specific quantity of that category.
So, for example, if you order five shares of the Steak category, you'll receive
five lbs of assorted rib, porterhouse, and/or t-bone steaks, each steak weighing
approximately 12-16 oz
If, in the example given, you get five steaks totaling 4.5 lbs, we can make change
with ground beef.
We are being conservative in our estimates, but if we do run out of a category before
your order is filled, we will offer you the choice of exchanging for a different
category from this harvest or getting put at the top of the list for the next creature
(we anticipate doing several harvests in the next few weeks)
After the two weeks of hangtime and a week of cutting and wrapping, you can pick
up your beef at the farm or one of our farmer's markets, or arrange to have it
shipped to you (for an extra cost). We now expect the beef to be ready for pickup
or shipping on the Wednesday, October 24th.
The butchering is being done in a third-generation "old-school" abattoir, known
for their meticulous work. Your cuts will be carefully double-wrapped in freezer
paper, and lovingly labelled with the name of the cut and the declaration "not
for sale"
....so don't go and sell it to someone, ok?

PORK, PORK, PORK!
We've just put five pigs' worth of Bobolink whey-fed pork up on the website. These
pigs were raised by us, dining daily on whey from our cheesemaking and stale bread
from our bakery, plus all the nuts, grubs, and unfortunate woodchucks that they
can out-run.
As usual, our pork can be purchased online and either picked up at the farm, at
one of our farmer's markets, or shipped to you via UPS. We will have some open
stock at the farm and markets, but pre-ordering is the only way to be sure to get
the cuts that you want.

As Autumn rolls in, we've got a lot of lovely Jean-Louis, Drumm, and Malbec Pyramids
that are ready to eat.
The Malbec Pyramids are buried in the "must" pressings from our friends and neighbors
Cameron & Jenn at Unionville Vineyards. After pressing out the juice, we get the
skins, seeds and some stems, and bury our cheeses in layers of the must, which impart
aroma, fruit, tannin, and a bit of booziness.
We are offering these cheeses a la carte on our website, as well as at the farm
and markets.

Sad News about Babka
Those of you who have visited the farm were no doubt greeted by Babka, our beloved
cattle dog. After a long run as our friend, helper, farm greeter, cow puncher,
chicken protector, and tour guide, Babka has passed peacefully to the Eternal Green
Pasture this past week, after a brief illness.
Babka came to us from the pound, after a pretty lousy first year of life. But the
Fates made it up to her: she spent the rest of her life in cattle-dog Nirvana-on-Earth.

Her transition was smooth and peaceful. She leaves behind a big hole in the heart
of our family, but we know that, with time, the sad vacuum will be filled by bittersweet
memory.

Earthquakes, floods, hurricanes, blathering politicians....enough of this nonsense,

On Sunday, November 6th, we'll be roasting one of our piggies in a Caja China, the
famed pig-roasting box of Cuba. We'll be serving the pig, along with lots of roasted
side dishes from our friends fields, and of course lots of bread and cheese. Details

Visiting the Farm this Autumn
Now that the monsoons are hopefully over, the weather over here in the Delaware
Valley is pretty nice. The air is clear and just a little crisp: Saturday, Sunday
and Monday (Colombus Day) are all forecast in the high 60s, and we have a bounty
of cheeses in our shop, along with our breads, meats, charcuterie, etc.
There are several nearby pick-your-own places in the vicinity, not to mention the
famed Ship Inn in the village of Milford, where traditionally brewed ales are served
along decidedly un-traditionally good pub food, and farm-to-table, no less.
We are a mere 70 minutes from the Holland Tunnel!
