Theory Vodka Bar
The Po Dog peeps open Seattle's first vodka spot

One theory about what makes a popular bar is that you need a place where everybody knows your name, and they're always glad you came, and they don't mind that you're a fat mailman named Cliff. On the other hand, some people think you just need vodka... lots and lots of vodka, which is why the crew behind Po Dogs, Auto Battery, Grim's, etc. have replaced the short-lived Evo with Theory Vodka Bar, a cavernous lounge built around a massive custom steel bar, boasting a sweet enclosed deck, a small selection of eats, and a cocktail menu filled with fruity melon liqueur drinks! that Russian favorite.
Said list includes the New World Alchemy (Stoli Orange/ St. Germain/ Thai basil/ Breckenridge bitters); the Bean Me Up (Kahlua/ espresso/ espresso vodka); and the Honey Badger, which features ginger vodka & housemade honey rosemary syrup... or at least it will if it transfers to McNeese St. And "for those who want to cheat on vodka", they've got mo' melon liqueur drinks! other booze-filled tipples like the light rum/ Cognac/ triple sec/ lemon juice Between The Sheets.
Theoretically (!) the menu will get bigger (a mimosa and Bloody Mary bar-heavy brunch starts in October), but for now they've just got light fare like prosciutto crostini and a selection of cured meats that you basically have to get, lest everybody knows you're lame.
