Meats
100% Grass-Fed Beef Finally, our supremely delicious 100% grass-fed beef is in stock! We've got plenty of ground beef at $7.50/lb, and cubes for marinating and kebobbing (yes, that's a verb). We also have a variety of braising cuts of this lovely big boy. Alas, he was not a good candidate for steaks, but we do have tenderloin at $25/lb (slightly reduced because you may want to marinate). Beef will be open stock at the farm store and Lincoln Center.
Suckled Veal
Our suckled veal is raised by momma on the pasture, so the meat is tender, rosey, and tasty, imbued with buttery fat. All cuts are available, including chops at $22/lb and ground at $16/lb. Open stock at the farm store, Denville, and Dvoor markets.

Exclusively at the farm this week: Suckled veal roast If you missed our Enabled Table Farm Supper this past Sunday, here is a way to get a taste of what you missed: Two whole suckled veal leg roasts, from the wood-fired oven Sliced leg roast, ready to eat, vacuum sealed in half pound portions Available at the farm store only, limited supply: $10/ea Jonathan's Pate De Campagne With Candy Cap mushrooms and cranberries. Enjoy on any of Nina's breads, with wine or beer. $24/lb in half and quarter pound packages. Jonathan's Liverwurst Classic liverwurst, made with our own beef liver, which is a delicate and sweet as calves' liver, thanks to living the good life. Traditionally seasoned with just salt, pepper and garlic. Enjoy on our garlic rye, with schmearkase, onions and a beer! $24/lb in half and quarter pound packages. |
Cheeses this week The early spring is a great time to make Baudolino, and this year's release is fabulous. We have plenty to go to each market, so come on out and get some! Also available this week are:

Butter
Back after a thirteen-year lacuna, Jonathan's Cultured Butter is extra-rich and full-flavored, churned from 100% grassfed cream, in collaboration with the Oasis Community, a fellowship of Amish farmers in Lancaster,PA.
It will be available at all of our locations. Sold in 8 oz logs, the butter is priced at $10 each.

...And REAL CHURN BUTTERMILK! When you make real butter, by churning cultured cream, there is a bonus: REAL BUTTERMILK!
Our Real churn buttermilk is not simply cultured milk, like the stuff of commerce, which is just a drinkable kind of yoghurt.
Real Churn Buttermilk is cultured cream minus most of the fat.
Cream is an emulsion of butterfat and lecithin--the lecithin is there to prevent the butter from churning inside mama, which would be unfortunate for her, to say the least.
When we churn our cultured cream, we break the emulsion: the fat goes to the butter, and the lecithin stays in the buttermilk, along with a whole lot of flavor, whey proteins and probiotics. The lecithin is what made the old magic in buttermilk pancakes, biscuits, fried chicken batter, soda bread, and so forth.
We have packed our Real Churn Buttermilk in little pints, a 16 ounce portion, enough to drink and use for your favorite recipe. Try it in your grandma's biscuits, and you'll rediscover the magic.

Please note that real churn buttermilk will make your biscuits and hotcakes much moister, but it does extend the cooking time a bit, so be patient and look for the browning, don't go by your watch.
