An embarrassment of cheeses!

Even like the sheep of which Vergil wrote, she "hath a golden hoof." To some one-time fertile regions she comes late, but she comes to save.
When the soil miner has wrought his perfect work and the earth no longer gives her increase-when seed for the sower and bread for the eater grow scanty-then the cows comes to the rescue. From the beginning she has exemplified the doctrine of soil conservation. Where she makes the land her own, green carpets of pasture possess the fields, alfalfa throws it perfume to the breeze and corn waves and rustles in the sunshine. There great new barns rise in the place of the old, and white-walled farmsteads speak of peace and plenty.
There contented farm folk found dynasties by striking the roots of their lives deep into the soil. "And such is the Kingdom of Heaven" Our Story:
In 2010, we moved our herd of Bronze Age cows to our newly purchased farm in Milford, NJ. The farm had not seen cattle in decades, and the fields were tired, from decades of commodity subsidy farming of corn and soybeans.
In 2013, our fourth season of grazing here, the soil fertility rebounded with gleeful abandon! Together with favorable weather--sun and rain in reasonable measure--this newly energized soil produced a bounty of grass, and thus milk and cheese. In prior years, we have sold out our prior year's cheeses by mid-Spring. Despite record sales this past year, we still have some truly amazing Drumm & Jean-Louis cheese from 2013.And, due to another truly amazing run of weather (cool wet spring, warm, rainy AND sunny summer thus far!) we have been making record quantities of cheese this year as well.All of this is great, except that we will soon run out of space in our cheese cave...So, we are turning this bounty into an opportunity to share our abundance with you, our favorite customers, by doing something that we have rarely done before:Cheese Sale! For the next two weeks, we are offering our grand reserve 2013 Drumm and Jean-Louis at a significant discount of 25% off! And, to sweeten the deal, we are offering this season's gooey Baudolino at the same price!
For orders place online before Monday, July 14th, or for purchases at the farm or any of our farmer's market stands before July 14, Drumm and Jean-Louis, regularly $24/lb, will be just $19.20/lb. Pesto is back!
What do you get when you mix fresh basil with garlic roasted in duckfat, a wee bit of olive oil, walnuts, and Bobolink cheese? You guessed it. Need we say more? Try it on our Emmer Pasta, or spread on any of our breads.
Available at all markets except Pleasantville (do try Buddhapesto there, it's great on our Petit Levain!). Packaged in half pound tubs, $7 each. Sold frozen for freshness and transportability in hot weather. Our pesto is pretty popular, so you may want to pre-order it here.

Meats
100% Grass-Fed Beef Finally, our supremely delicious 100% grass-fed beef is in stock! We've got plenty of ground beef at $7.50/lb, and cubes for marinating and kebobbing (yes, that's a verb). Alas, he was not a good candidate for steaks, but we do have tenderloin at $25/lb (slightly reduced because you may want to marinate). Beef will be open stock at the farm store, Union Square, and Lincoln Center. Suckled Veal
Our suckled veal is raised by momma on the pasture, so the meat is tender, rosey, and tasty, imbued with buttery fat. All cuts are available, including chops at $22/lb and ground at $16/lb. Open stock at the farm store, Lincoln Center, Union Square, Denville, and Dvoor markets.

At the farm and markets this week: Jonathan's Liver Pate (traditional liverwurst) Classic liverwurst, not the gummy stuff you may have been forced to eat as a kid.
Made with our own beef liver, which is a delicate and sweet as calves' liver, thanks to living the good life. Traditionally seasoned with just salt, pepper and garlic. Enjoy on our garlic rye, with schmearkase, onions and a beer! $24/lb in half and quarter pound packages.

We've got lots of calves, piggies, and chickens to see on the tours, which are held Saturdays & Sundays at 3 through the summer months.

Classes Jonathan and Nina have planned the entirety of 2014, so you can reserve your space early and get in on all of the fun. Or give the gift of learning to a lucky friend. You can gift the actual class, or a gift certificate! We currently offer classes in cheesemaking and baking. We will be offering classes in charcuterie and other meat preparations during the winter. |
