Chicken Citrus Salad

Metric Ingredient Imperial - VINAIGRETTE - 30 ml fresh orange juice 2 tbsp 30 ml red wine vinegar 2 tbsp 10 ml olive oil 2 tsp 10 ml honey 2 tsp 5 ml dijon mustard 1 tsp - SALAD - 4 small cooked skinless, boneless chicken breasts 4 1 L mixed salad greens, torn 4 cup 2 medium oranges, peeled & sectioned 2 2 green onions, chopped 2 6 fresh strawberries, quartered 6

VINIAGRETTE: In a small bowl; combine orange juice, vinegar, oil, honey and mustard. Set aside. SALAD: Cut cooked chicken into small slices. In a large bowl; toss greens, orange sections and green onions. Arrange salad mixture on four plates. Place a sliced chicken breast on each plate. Drizzle with vinaigrette. Garnish with strawberries. Serves 4
