In a heavy saucepan; place chicken breasts. Cover with cold water. Bring to boil; remove from heat. Cover and let stand 2 hours. (The retained heat will cook chicken and keep it moist.) Drain chicken and tear into small pieces; set aside. In large serving bowl; stir water, soy sauce, honey, tarragon, peanut butter and sesame oil until well combined. Cut asparagus into large bite-size pieces. Add chicken and asparagus to soy mixture. Toss until well coated. Serve with hot rice. Serves 5 | |||||||||||||||||||||||||||
