Metric Ingredient Imperial 2.3 kg roasting chicken 5 lb 4 L water 16 cup 12 small pearl onions, peeled 12 6 ribs celery, chopped 6 500 ml small turnips, peeled & quartered 2 cup 3 medium carrots, chopped 3 2 green peppers, cored, seeded & quartered 2 375 ml leeks, chopped 1 1/2 cup 2 bay leaves 2 2 cloves garlic, peeled & left whole 2 12 peppercorns 12 7 ml dried thyme 1 1/2 tsp - salt & pepper to taste - 3 small zucchini, chopped 3 2 medium parsnips, peeled & quartered 2 150 ml uncooked rice 2/3 cup

In a large dutch oven over high heat; place chicken, water, onions, celery, turnips, carrots, green peppers, leeks, bay leaves, garlic, peppercorns, thyme, salt and pepper. Bring to boil; reduce heat to low; cover and cook 45 to 75 minutes, or until chicken is almost tender. Add remaining ingredients; cook 15 minutes or until rice is tender. Remove bay leaves; skin chicken. Serves 8
