Pasta Shrimp Salad
Metric Ingredient Imperial
125 ml mayonnaise 1/2 cup
2 large eggs, hard-boiled, shelled & chopped 2
- salt & pepper to taste -
3 cans tiny deveined shrimp, drained (6 oz / 175 g) 3
1 L cooked mini pasta shells 4 cup
2 medium tomatoes, stemmed & diced 2
In a bowl, whisk together mayonnaise, egg, salt and pepper to taste. Cover tightly and refrigerate at least one hour.

Thoroughly rinse shrimp under running water, pat dry using paper towels.

In another bowl, combine shrimp, pasta and tomatoes. Cover tightly and refrigerate until needed.

Fluff up mayonnaise mixture with a whisk and spoon over shrimp and pasta. Toss gently to coat.
