Parmesan Sole

Parmesan Sole
Metric Ingredient Imperial
8 sole fillets 8
125 ml all purpose flour 1/2 cup
30 ml butter 2 tbsp
2 green onions, thinly sliced 2
2 ml salt 1/2 tsp
2 ml pepper 1/2 tsp
250 ml chicken broth 1 cup
40 ml lemon juice 3 tbsp
125 ml parmesan cheese, grated 1/2 cup
Coat fish fillets with flour; set aside. Melt butter in skillet over medium low heat. Cook onions in butter to 3 to 5 minutes, stirring occasionally, until tender crisp. Add fish and cook uncovered 4 minutes, turn fish carefully. Cook 4 minutes longer. Sprinkle with salt and pepper. Pour broth and lemon juice into skillet. Sprinkle with cheese. Bake uncovered in preheated 375 F (190 C) oven for 15 minutes.
