Veggie Pita Pizza

Veggie Pita Pizza
Metric Ingredient Imperial
4 pita breads, split in half 4
250 ml roma tomatoes, chopped 1 cup
500 ml zucchini, chopped 2 cup
50 ml onion, chopped 1/4 cup
50 ml ripe olives, sliced 1/4 cup
2 ml dried basil 1/2 tsp
125 ml pizza sauce 1/2 cup
250 ml mozzarella cheese, shredded 1 cup

Place pita breads on cookie sheet.  Bake in preheated 425 F (220 C) oven for 5 minutes or until crisp.

In a medium bowl; mix tomatoes, zucchini, onion, olives and basil.  Spread pizza sauce evenly over pita rounds.  Top with vegetable mixture.  Sprinkle with cheese.

Bake 5 to 7 minutes or until cheese is melted.  Cut into wedges.
