Warm Potato Salad with Olive Dressing
Metric Ingredient Imperial
1.4 k small potatoes 3 lb
125 ml green olives, pitted & finely chopped 1/2 cup
10 ml capers, finely chopped 2 tsp
125 ml flat leaf parsley, chopped 1/2 cup
5 ml lemon zest, finely grated 1 tsp
30 ml lemon juice 2 tbsp
2 garlic cloves, crushed 2
125 ml extra virgin olive oil 1/2 cup

Boil potatoes until just tender.  Drain and cool slightly.

Meanwhile, in a small bowl, whisk together olives, capers, parsley, lemon zest, lemon juice, garlic cloves and oil.

Cut warm potatoes in half and place in serving bowl.  Pour dressing over and gently toss.  Season to taste with salt and pepper.  Serve warm.
