Baked Broccoli Squares

Metric Ingredient Imperial 1 l fresh broccoli, chopped & steamed until just tender 4 cup 5 eggs 5 30 ml flour 2 tbsp 2 ml baking powder 1/2 tsp 250 ml cottage or ricotta cheese 1 cup 250 ml cheddar cheese, shredded 1 cup - salt & pepper to taste -

Place steamed broccoli in lightly greased 8 inch (20 cm) baking dish. In medium bowl; beat eggs with flour and baking powder just until smooth.  Stir in cottage cheese.  Pour egg mixture over broccoli.  Bake in preheated 350 F (180 C) oven for 25 minutes.  Sprinkle with cheddar cheese and bake for an additional 3 to 5 minutes or until centre is almost set and cheese is melted. Servings: 6
