Chickpea tomato salad with feta: A high fiber, flavor-rich Mediterranean medley

A couple years ago, Healthline had the pleasure of collaborating with Rissetto for a series we did on creative, accessible recipes. One of the fan-favorite recipes to come out of that collab was this chickpea tomato salad with feta, a great dish to serve while the weather is hot and the cherry tomatoes are in season. (The recipe calls for grape tomatoes, but any variety of cherry tomato will do.)
You gotta love Rissetto's simple approach to flavoring in this dish, which features a classic Mediterranean combination of lemon, garlic, basil, salt, and pepper.
Packed with fiber and protein, this salad may have particular appeal if you're managing your weight or living with type 2 diabetes. Protein and fiber are both excellent for helping keep weight off, as they help you feel full longer. Research also suggests that fiber is crucial for gut health, which may help with weight management.
