Summer Thyme Ravioli

Pick up some of our Summer Thyme Ravioli this week! They are the perfect centerpiece for a meal of summer salad, seasonal veggies...really any combination of the fun farmer's market finds!

Filled with 100% grass-fed ricotta, local eggs, and Nina's Lemon Thyme, they cook in just 4 minutes and are superb with a shave of our firm autumn Amrams!

Cheese forecast:

Amram: (sold out) A small, round delight named for the music icon, David Amram. David is a dear friend, and got Jonathan started on his cheese making career when we were neighbors in Putnam Valley, NY!

Cider washed Amram: A lovely little round delight named for David Amram, and washed in Ironbound Hard Cider during the ripening process. Our current Amrams are beautifully firm and dry, perfect for grating! Silver Medal winner at the World Farmstead Cheese Awards in 2018, Lyon France!

Baudolino: Young spring edition...gooey and delightful. Amazing with strawberries!

Baudolino cured in Blaufrankisch wine must: (sold out) We bury our lovely Baudolino cheeses in grape must, which is the skins of grapes that have been pressed for wine! The cheese gets a beautiful fudgy, gooey texture, and the flavor is delicately laced with wine aroma. Excellent with wine, also excellent with ales and ciders!

Drumm: Young Spring edition is in! Light crumbly center, runny along the rind. Outstanding. We also still have some of our Autumn production, deep flavor, fudgy texture, almost like bittersweet chocolate.

Endgame: Soft and more than a bit stinky, it is a delight for the senses.

Forêt, for Ray: 1/2 pound round that has been washed in a lovely sour ale made at Descendants Brewery in Milford. This cheese is so smooth & tasty! Delightful with fruit, fresh green salads, and breads, of course!

Grana: A blend of our firmer cheeses, grated for convenience. Use as you would a Reggiano, but a bit moister, with a lovely intense flavor that's perfect on pasta and salads!

Jean-Louis: Bold, bright, meaty, with a texture that is light, crumbly, and smooth at the same time. It's a little ugly, which means it's at its best!

Jean-Louis Blue: (sold out) This special edition run of Jean-Louis cheese is a blue! The flavor is gently & complexly blue, with a sublime texture that is buttery and fudgy. This cheese is distinctly less salty than most blues!

We also continue to carry the following cheeses made by our Amish colleagues in Lancaster, PA:

Cave-Aged Cheddar: a truly exceptional cheddar, sweet, mellow. Go ahead, use it in mac & cheese...a little goes a long way.

Frolic: Alpine style, mild but not simpleminded, great in sandwiches or on its own, melts well. Try it in french onion soup!

Cheddar Grand Reserve:  (coming soon) made in 2019, this cheddar has lovely crystallization!

These two need to be pre-ordered for Tucker Square:

Amish Schmearkase: (sold out till mid-July) dense, semi-soft texture, nutty and buttery with the lightest hint of stink.

Amish Blue: subtle and complex cultures, rich milk flavor. This is the blue that folks who don't like blue will like!

Available for shipment or pre-order here, or come out and shop.

Whey-fed Pork

Whey is the by-product of our cheesemaking, and we gather the whey daily to feed it to a group of heritage breed pigs each season! We have some beautiful roasts available here!

The best pork ever, available in retail cuts, sold frozen, as well as a line of charcuterie made by our culinary team. How about some Whey-fed Pork Garlic Paprika Thyme Sausage?

Check out all of our charcuterie here.

100% grass-fed Beef

We have our delicious 100% grass-fed mature beef, our supplies are a bit low but we have some braising cuts! We plan to have more in about a month. Take a look online, or stop by the farm store soon!

Now in stock at the farm store...our own Pepperone!

Pastured, suckled Veal

Our pastured, suckled veal, was raised by our cows on the pasture, drinking milk, grazing, and getting plenty of fresh air and sunshine. We have a great supply in stock, so please check out our listing here, or come in to the farm store...we'll also be bringing some to markets.

Harvested just a short ride away, we are proud to bring you meat that we feel is ethical, regenerative, and, of course, delicious.

Bye for now...stay safe, eat well, spread love...
