Amram: (sold out) A small, round delight named for the music icon, David Amram. David is a dear friend, and got Jonathan started on his cheese making career when we were neighbors in Putnam Valley, NY! Cider washed Amram: A lovely little round delight named for David Amram, and washed in Ironbound Hard Cider during the ripening process. Our current Amrams are beautifully firm and dry, perfect for grating! Silver Medal winner at the World Farmstead Cheese Awards in 2018, Lyon France! Baudolino: (very limited this week) Early summer edition...smooth and earthy. Amazing with blueberries! Baudolino cured in Blaufrankisch wine must: (coming in Fall) We bury our lovely Baudolino cheeses in grape must, which is the skins of grapes that have been pressed for wine! The cheese gets a beautiful fudgy, gooey texture, and the flavor is delicately laced with wine aroma. Excellent with wine, also excellent with ales and ciders! Drumm: Young summer edition is in! Light crumbly center, soft along the rind. Outstanding. Endgame: Soft and funky, it is a delight for the senses. Forêt, for Ray: (few this week) 1/2 pound round that has been washed in a lovely sour ale made at Descendants Brewery in Milford. This cheese is so smooth & tasty! Delightful with fruit, fresh green salads, and breads, of course! Fossil: Some super-aged Baudolino that has a deep and lovely funk, perfect grated into salads and pastas. Too ugly to ship, swing by and have a taste...you'll need a nice little morsel! Grana: A blend of our firmer cheeses, grated for convenience. Use as you would a Reggiano, but a bit moister, with a lovely intense flavor that's perfect on pasta and salads! Jean Louis: Bold, bright, light, 3 month young release! Always delightful. Jean-Louis XR: Bold, bright, meaty, extra strong, with a texture that is crumbly and smooth at the same time. Currently 12 months old!!! Just a bit available at the farm and at markets. Jean-Louis Blue: (sold out) This special edition run of Jean-Louis cheese is a blue! The flavor is gently & complexly blue, with a sublime texture that is buttery and fudgy. This cheese is distinctly less salty than most blues!

Cave-Aged Cheddar: a truly exceptional cheddar, sweet, mellow. Go ahead, use it in mac & cheese...a little goes a long way. Frolic: Alpine style, mild but not simpleminded, great in sandwiches or on its own, melts well. Try it in french onion soup! Cheddar Grand Reserve: (coming soon) made in 2019, this cheddar has lovely crystallization!

Amish Schmearkase: (sold out till mid-July) dense, semi-soft texture, nutty and buttery with the lightest hint of stink. Amish Blue: subtle and complex cultures, rich milk flavor. This is the blue that folks who don't like blue will like!
