Mixing Beef and Pork
I love to smoke pork butt and beef brisket. I have always used a smoker grill with an offset firebox when doing my smoking. However, I am looking at getting a vertical smoker with the shelves directly over top each other. My concern is: I have always been told that you cannot mix beef blood with pork blood as the resulting mix is toxic. With a vertical smoker, if I had a pork butt on one shelf and a brisket on another shelf, then some of the blood from the top meat would inevitably drip onto the meat below it. If what I have been told were true, this may cause an unsafe mix. I know this may sound like a silly question, but I just wanted to make sure before I spend several hundred dollars on a vertical smoker; should I stick with my grill style smoker or move to the vertical smoker.
