Recipe of the Week
Maraschino Cherry Nut Bread
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup sugar
---
2 eggs
1/2 cup butter, melted and cooled
1 cup milk
1 teaspoon vanilla, juice from cherry jar or cherry

liqueur
1 cup chopped nuts*, lightly toasted
10 ounce jar (apprx. 1 cup) chopped maraschino cherries

Preheat oven to 350 degrees F. Grease and flour one 8-inch by 4-inch or 2 6-inch by 3-inch mini loaf pans. Combine the first set of ingredients in large bowl with wire whisk. In smaller bowl, combine second set of ingredients. Add wet ingredients to dry. Only mix until moistened. Carefully, stir in nuts and cherries. Spoon into prepared pans. Bake 8-inch pans for 55 - 60 minutes. Bake mini pans for 45 minutes. *For nuts, use pecans, walnuts, slivered almonds, hazelnuts etc. If use salted nuts, don't use salt in recipe.
