Barbecued Pork
This recipe cheats a bit since it uses ketchup, not normally found in Chinese barbecue recipes. The plus side is that it tastes delicious and uses ingredients available in most supermarkets. Besides, ketchup does have a Chinese connection - it is a descendent of a Chinese pickled fish sauce called ketsiap.

Potsticker Dipping Sauce
The key ingredient is Chinese red rice vinegar, which has an intriguing combination of sweet and tart flavors. (Be sure not to get it confused with red wine vinegar, which would make the dip taste too sour). This simple potstickers dipping sauce goes nicely with regular or vegetarian potstickers.
Red rice vinegar is available at Asian markets.

Blueberry Tofu Smoothie
Can anything beat a smoothie when the weather gets warm? This smoothie is a great way to take advantage of blueberry season, combining the tart flavor of blueberries with sweet banana and honey. The smoothie can be made with either silken tofu or plain yogurt.

Top Picks - Beijing Recipes  from your   Guide
Harsh winters and hot dry summers make for a short growing season in northern China. Wheat is the staple grain and root vegetables such as garlic and green onion make a frequent appearance in northern Chinese dishes. Of course, Beijing (then called Peking) was once the seat of the Imperial Court - skilled Imperial chefs incorporated the best of regional cuisines throughout China into their dishes.

1) Mu Shu Pork
One of the most popular dishes at Chinese restaurants, Mu Shu Pork is thought to resemble a wooded forest scene, with earthy vegetables such as cloud fungus, and scrambled egg representing yellow flowers, all served on a "ground" of mandarin pancakes.

2) Peking Duck
An entire chain of Beijing restaurants specialize in serving the succulent pieces of roasted duck. Traditionally, the duck is sliced at the table, where a skilled chef will cut it into over 100 pieces, each containing an equal portion of skin and fat.

3) Mandarin Pancakes
Here are the pancakes that are traditionally served with Mu Shu Pork, made with a hot water dough.
