A chill has been creeping into the night air lately and it has inspired me to spend more time in the kitchen. I especially love baking and making comforting, richer dishes during this time of year.
A sure sign of the change in seasons is the number of enthusiastic home cooks who have written to me asking about alternatives for super-expensive creme fraiche. It is a staple ingredient of French cooking and perfect for rich, cool-weather food, but it can be hard to find and pricey. Instead of looking for substitutes, I suggest making your own; it takes very little hands-on preparation and tastes absolutely wonderful.
