Leftover Easter Ham Recipes
If you're planning to cook a large ham for Easter you're probably going to have leftovers. From Fried Rice and Winter Melon Soup to Egg Foo Yung, these easy Chinese recipes are a great way to use up leftover cooked ham. Just be sure to refrigerate the leftover ham within 2 hours and use within 3 to 4 days.

Chinese Tea Eggs (Marbled Eggs)
Here's a different way to serve hard boiled eggs on Easter morning - in this recipe the boiled eggs are gently simmered in a flavorful combination of black tea and spices. For an extra kick, serve them with hot mustard or mayonnaise mixed with a bit of sweet chile sauce.

Mongolian Lamb
A classic northern Chinese dish - marinated leg of lamb is paired with fresh garlic and scallions (spring onions) and coated in Chinese seasonings. Asian sesame oil provides the finishing touch. Hunan Lamb - lamb with chili peppers and leeks.
