Plenty of good stuff comes from Florida, like college football programs that make Ohio State look like a bunch of schoolboys, and voter fraud that makes the state of Ohio also look like a bunch of schoolboys. Now the Sunshine State's sending us football-watching eats: Serious Pizza, opening Thursday.
Serious' Floridian co-owners met in their early 20s, when the two earned their rent at 'za institutions in Tallahassee and Orlando; their brick-walled twin-TV'd Deep Ellum 30-seater gives a nod to their favorite former employers via fixtures (a full-length bar overlooking the pie-making action), design accents (a projector that beams the menu over the oven), and a philosophy of "Keep It Simple, Stupid", a KISS that KISS would've done well to remember before releasing Music From "The Elder". All pies are handtossed thin-crusts and use cheese from Mozzarella Co., with sizes ranging from 18" to a hefty 30", and full customization available not just on whole pizzas, but also on slices; plus you can add two toppings of choice to Parmesan, mozz & ricotta-oozing calzones baked using homemade shells -- which as any militia member can tell you, are likely to blow you up. Toppings-wise, they're going quality-classic with the likes of meatballs, ham, artichokes, portobellos, pineapples, and sweet, sweet anchovies; specialties run from the five-protein'd "Big Meat" to the cheese-free five-vegetable "Vegan", sure to have Big Meats questioning the size of your sausage.
As for the most important part of every meal, the plan's to eventually bring in tap beers and seasonal bottles, but for starters they're going BYOB, giving you the opportunity to drink 'til your vision's totally Buck'd.
