Quickly cool hot oatmeal with crushed ice

Amazon: Cubette Mini Ice Cube Trays Some of us eat oatmeal for breakfast every day, no matter what the weather. Here's Jill's time- and tongue-saving cool-down tip:

To cool off oatmeal easily, I make it with about half of the normal amount of water and microwave it. I then add some crushed ice to cool it off and get it to the right consistency all at once.

For those of us without a refrigerator outfitted with an icemaker, check out these mini ice cube trays! They would work just as well. Good for blending ice into a smoothie, too!

Homemade fruit "creamsicles"

Amazon: Tovolo 80-8003Y Yellow Groovy Ice Pop Molds, Set of 6I read relatively few PR emails, but this one stood out. This recipe arrived via the folks promoting Eagle Brand condensed milk, and it was billed as "DIY ice cream." I'm thinking it would make fantastic, creamy homemade popsicles. Lovely summer treat.

FRESH FRUIT ICE CREAM

 Yield: About 1 1/2 quarts 

1 (14 oz.) can sweetened condensed milk (NOT evaporated milk)
1 tablespoon vanilla extract
1 cup pureed or mashed fresh fruit, such as peaches, strawberries, bananas and raspberries
1 pint (2 cups) heavy cream 

COMBINE sweetened condensed milk and vanilla in large bowl; stir in 1 cup pureed fruit. Fold in heavy cream. Pour into 9 x 5-inch loaf pan or a 2-quart freezer container; cover. Freeze 6 hours or until firm.

I'm thinking you could pour the mixture into popsicle molds, or into an ice cream maker, if you have one. Or, try the Ziploc ice cream method!
