Vermont tourist dollars aside, isn't it about time we dropped the whole "Paris without the airfare" angle? Aren't we doing ourselves a disservice? All we're saying is, for a town that looks more like South Philly than the Rive Gauche, and eats more like Rouyn-Noranda than Rue de Faubourg St.-Honore, there's no point running dogs that won't hunt.
So what to do? Well, up in Outremont, Chef S'Arto Chartier-Otis is breaking down a "Brasserie Montrealaise" thing in the kitchen he helms at Brasserie Enfants Terribles that makes even L'Express (and all the other bistros Francaises) look a little colonial-insecure.
With that in mind, and with a renewed sense of maitres chez nous self-confidence, we approached Chartier-Otis for a few pointers on self-definition. Read on for his Montreal.

In His Words: "When I think breakfast, I think good and simple. My all time favourite is lox on a Montreal bagel with cream cheese. I always have high expectations and I know it’s always perfect at Beauty’s. This place is a breakfast institution here, and I love their diner decor."
S'ARTO CHARTIER-OTIS' FAVORITE LATE-NIGHT SPOT Le Nouveau Palais Why? Because this place does the late-night necessities right.
In His Words: "For drinks and a late-night snack, nothing beats Le Nouveau Palais’ tacos, downed with a Labatt 50 and a spicy bloody Caesar. This cool and unpretentious joint is just down the street from Les Enfants Terribles, and it's the perfect place to let off some steam and adrenaline after a big service."
S'ARTO CHARTIER-OTIS' FAVORITE RECENT DISCOVERY Kazu Why? Because we were a little slow on the izakaya uptake, but we're there now.
In His Words: "This place takes me back to when I used to work at Senderens in Paris, with a Japanese chef with whom we shared great meals and ideas. His name was Kazu, just like this restaurant on Ste-Catherine. The food and atmosphere there are simply amazing, and remind me of great times."

LAST WEEK'S TOP PICK La Distillerie Why? Because drinking is about the company -- but it's also about the drinks.
There's like three of these in Montreal, but we have it on good word that this one is the best of the bunch. Source? This out-of-town femme fatale with whom we rolled down from Hachoir a few days back in order to get into some more serious drinking. We remember large mason jars, creative not-quite-mojitos and a crisp, conservative (if a little dirty) martini for... a friend of ours who didn't want to pull a switchup, get drunk and say something stupid. Next time he'll venture onto the extensive craft cocktails list... and he's really been pushing for a next time. She's kind of a ten.
