Researchers for years have attributed the health-promoting affects of vegetables
in our diets to the content of vitamins, minerals, and fiber. More recently, research
studies confirm that plant foods contain thousands of other compounds called phytonutrients
that are intrinsically valuable to optimal health, particularly in the area of cancer
prevention.[1]
According to the U.S. National Cancer Institute, the plant asparagus contains high
amounts of glutathione (GSH), one of the body's most potent antioxidants. Glutathione
(GSH) has many important functions in the body, but most importantly, its ability
to fight free radical damage, especially in the brain. Most interestingly, asparagus
contains more GSH than any other fruit or vegetable.[2]
Parsley, celery and carrots contain compounds called bioactive aliphatic C17-polyacetylenes.
These polyacetylenes have been shown to be highly toxic towards fungi and bacteria.
They also display anti-inflammatory and anti-platelet-aggregatory properties in
the body, which reduce inflammation and blood platelet sticking/clotting. The
effect of these polyacetylenes on human cancer cells and their ability to reduce
tumor formation indicates that they may also provide many health benefits.[3] In
addition, parsley contains the flavonoid apigenin which actually acts as a chemotherapeutic
agent used in fighting ovarian cancer. Researchers have found that apigenin inhibits
the expression of vascular endothelial growth factor (VEGF) in human ovarian cancer
cells. This growth factor VEGF plays an important role in tumor blood vessel growth
called angiogenesis and the spreading of cancer. Research now shows that apigenin
inhibits VEGF and tumor growth.[4]
Researchers have identified at least 13 different flavonoid compounds in spinach
that function as antioxidants and as anti-cancer agents. Many of these substances
in spinach fall into a technical category of flavonoids called methylenedioxyflavonol
glucuronides. The anticancer properties of these vegetable flavonoids have been
sufficiently impressive to prompt researchers to create specialized extracts that
could be used in controlled studies. These spinach extracts have been shown to slow
down cell division in stomach cancer cells or gastric adenocarcinomas. [5] Also,
in studies on laboratory animals, spinach extracts have clearly been shown to help
reduce certain types of skin cancers. [6] In addition, a carotenoid found in Spinach
and other green leafy vegetables fights human prostate cancer two different ways,
according to research published in the Journal of Nutrition. The carotenoid is
called neoxanthin, which induces prostate cancer cells to self-destruct in a process
called apoptosis. Interestingly, neoxanthin changes into a compound called neochromes
in the intestines which put prostate cancer cells into a state of stasis (stoppage),
and prevents their replication. [7]
New research, published in the International Journal of Cancer, reports that increased
intake of the flavonoid called kaempferol, found abundantly in greens, was associated
with a 40% reduced risk of ovarian cancer. The new study, led by Margaret Gates
from Brigham and Women's Hospital and Harvard Medical School, provides vital health
data since no prospective study has previously examined the association between
flavonoid intake and ovarian cancer risk. Gates and co-workers calculated intakes
of the flavonoids myricetin, kaempferol, quercetin, luteolin and apigenin among
66,940 women enrolled in the Nurses' Health Study. Between the years 1984 and
2002, 347 cases of epithelial ovarian cancer were diagnosed. While total intake
of the five flavonoids together was not found to provide a benefit, a significant
40% reduction in ovarian cancer incidence was observed between the women with the
highest kaempferol intake, compared to women with the lowest intake. Foods richest
in kaempferol include spinach, onions, kale, cabbage, leeks, broccoli, blueberries
and most green and brown teas. [8]
Epidemiological studies have revealed that cancer incidences in populations that
consume plenty of vegetables on a daily basis were considerably lower than in those
that did not eat vegetables. Furthermore, vegetables from organically and conventionally
cultivated farms were analyzed to determine their antioxidative and antimutagenic
activities and chemical content of polyphenols. The antioxidative activity shown
by organic vegetables was 120% times higher than that shown by conventional vegetables.
In comparison with conventional vegetables, the antimutegenic activity shown by
organic vegetables was higher. Among all green vegetables juices tested for flavonoid
composition, quercitrin, caffeic acid and baicalein in organic vegetables were
detected in concentrations that were 10.4 times higher than those found in conventional
vegetables. This clearly supports the value of the benefits of eating organic vegetables.
