Because international pancakes hopped the shark years ago, opt for a different worldly breakfast from Belgian Waffle Co.: a mobile trailer run by a guy who retired from the tech sector to launch a Michelin-starred resto in his Belgique hometown, then closed shop and moved all the way to Austin for a laid-back life of artisan wafflery, finding freedom by getting on the grid.
Relegating the common Brussels variety to the commoners, he instead uses all-imported ingredients to create Waffles de Liege. Invented 300yrs ago by the prince of their namesake city, they're made from dough instead of batter, caramelized with pearl sugar crust, and ironed into irregular shapes by a 2400watt press, then topped with sweeteners ranging from freebies (powdered sugar, whipped cream) to upgrades like Nutella, Blue Bell, and local honey (Belgian honeys are way too Luxe).
To account for Americans junkie-like need for the savory, they're also making meals of these things, with breakfast add-ons like eggs, bacon, ham, cheese & pico, and lunchables like sausage, tomato, onion, spinach dip & BBQ sauce. Soon they'll branch out to locally sourced farmer's market toppings including chorizo, which will lead to very Happy Days.
