Helmed by the guy who started this hotel-based burger chain, Relish has a little somethin' for everyone (morning barista service, a burgers-to-go deal, 18 local brews on tap), but mostly what they've got are meat discs, including a dozen signature options like the Niman Ranch beef Pike Place Special w/ fried onion rings, applewood-smoked bacon & a rich peppercorn cheese from Beecher's called Marco Polo, which'll make you much easier to find in a pool.

One night a week, Maria Hines' Ballard eatery is letting you choose your own dining adventure by picking a pasta, a sauce (truffle cream, shrimp-parsley pesto, etc.), cheese (Gruyere, smoked Gouda...), meat options like spicy lamb sausage, or even vegetables (though choosing one of those would be worse than confronting the viking ghost on page 87 of The Cave of Time, so maybe stick with the other stuff).
