Butter


Back after a thirteen-year lacuna, Jonathan's Cultured Butter is extra-rich and full-flavored, churned from 100% grassfed cream, in collaboration with the Oasis Community, a fellowship of Amish farmers in Lancaster,PA.

It will be available (while supplies last) at all of our locations.  Sold in 8 oz logs, the butter is priced at $10 each.

When you make real butter, by churning cultured cream, there is a bonus: REAL BUTTERMILK!

Our Real churn buttermilk is not simply cultured milk, like the stuff of commerce, which is just a drinkable kind of yoghurt. 

Real Churn Buttermilk is cultured cream minus most of the fat.

Cream is an emulsion of butterfat and lecithin--the lecithin is there to prevent the butter from churning inside mama, which would be unfortunate for her, to say the least.

When we churn our cultured cream, we break the emulsion: the fat goes to the butter, and the lecithin stays in the buttermilk, along with a whole lot of flavor, whey proteins and probiotics.  The lecithin is what made the old magic in buttermilk pancakes, biscuits, fried chicken batter, soda bread, and so forth.

We have packed our Real Churn Buttermilk in little half-pints, an eight ounce cup for your favorite recipe.  Try it in your grandma's biscuits, and you'll rediscover the magic.

Or, just tip it back and enjoy!  (I'm going to work on an eggnog recipe, just you wait!)

Please note that real churn buttermilk will make your biscuits and hotcakes much moister, but it does extend the cooking time a bit, so be patient and look for the browning, don't go by your watch.

-Cave-Aged Cheddar - 15 months old, sweet, complex, with great crystallization
-Frolic - Our Alpine style firm wheel, now mature and assertive.
-Drumm - earthy, complex, smooth and wine-y
-Jean-Louis - bright, bold, creamy
-Amish Blue - made by Oasis at Bird-in-Hand (a cooperative in Lancaster, PA), a brilliant, strong, blue

When you order from us, you can have your order shipped to you via UPS, or you can arrange for it to be picked up at the farm, or at one of our farmer's markets.

Holiday UPS orders:

We usually ship your order on the Monday or Tuesday following placement.  So, for example, if you want a box of goodies to arrive at your house, or a friend's house(lucky friend!), for Thanksgiving, simply order by Noon on Monday (11/25).

If however, you want the order shipped closer to holidays surrounding the Winter Solstice, all you need to do is, during Order Review, type in the box titled "customer notes":

 "PLEASE SHIP WEEK OF [the Monday of your choice]"

 and we will follow your wishes. 

Our last shipping date for 2013 will be Tuesday, December 17th.  We apologize for this early deadline, but we get really sad when our products get lost and ruined in the mad crush of festive giving.

  

On the Farm


We have plenty of fresh breads, glorious cheeses, our own pasta, pesto, and products from our farming friends including eggs, honey, and duck products.

Regular farm store hours are:
Monday, Wednesday, Thursday, Friday 12-6, Saturday & Sunday 9-5 (closed Tuesdays).

The farm store will be open from 11-3 on Tuesday, December 24 for Christmas Eve and Tuesday, December 31 for New Year's Eve.

Bobolink will be closed on Christmas and New Year's Day.

Farm Tours are held every Saturday and Sunday at 2, in all weather (except blizzards and hurricanes!).  The tour includes a pasture walk to see the cows in their element.  It is a peaceful sight, a world away from the whirlwind of modern living!
