Bobolink Update:  Saturday, July 19

Cheese Sale Continued thru July 31
 
We just cored a sample from a September 2013 Jean- Louis, and it is every bit as wonderful and plentiful as the October bunch.
 
So, to make room for our current production in the quite-full cheese cave, we are continuing our highly popular cheese sale through the end of July!
 
Jean-Louis, Drumm and Baudolino, regularly $24/lb, are now just $18/lb at the farm, online, and at all of our farmer's market stands, through July 31. Enjoy!
 

Craft Beer Jam at The Greene Space,

"Pairing beer with food" 
Join us with our good friend, Jimmy Carbone, at the WNYC/WQXR Greene Space in lower Manhattan for music, conversation, beer, and Bobolink snacks.  The event costs $25 per person, and takes place from 7-9 pm  on Wednesday, July 23.

Bobolink Cucumbers, green and blue beans, and Jonathan's half-sour pickles
 
Bobolink's kitchen garden is going bonkers this season! we have an abundance of kirby cucumbers, old-fashioned green beans and blue cocoa beans.  

The beans are being picked young, at the haricot vert stage, more or less.  They are delicious raw, steamed or sauteed--but note that the blue color goes green when you cook them. We are also pickling beans, first batch will be ready soon.

The cukes are nice for slicing, with thin, un-bitter skins, and also make really nice cucumber salad.

Jonathan has been pickling cucumbers for a couple of weeks now, and the first half-sour dill pickles are ready. Jonathan is reprising his late Grandma Pauline's famous dill pickles, cured with just salt (no vinegar) and lactic acid fermentation, using grape leaves, fresh dill and garlic scapes for seasoning.

Remember the old Mickey Katz song, "a nickel for a pickle"? (Mickey was the father of Joel Grey and grandfather of Jennifer Grey of Dirty Dancing fame.)  well, those days are gone! Now it's a nickel for 1/20th of a pickle!


Pesto is back!

What do you get when you mix fresh basil with garlic roasted in duckfat, a wee bit of olive oil, walnuts, and Bobolink cheese?  You guessed it.  Need we say more?  Try it on our Emmer Pasta, or spread on any of our breads.

Available at all markets except Pleasantville (do try Buddhapesto there, it's great on our Petit Levain!).  Packaged in half pound tubs, $7 each.  Sold frozen for freshness and transportability in hot weather.

Meats
  
100% Grass-Fed Beef 
  
Finally, our supremely delicious 100% grass-fed beef is in stock!  We've got plenty of ground beef at $7.50/lb, and cubes for marinating and kebobbing (yes, that's a verb).  Alas, he was not a good candidate for steaks, but we do have tenderloin at $25/lb (slightly reduced because you may want to marinate).  Beef will be open stock at the farm store, Union Square, and Lincoln Center.  
  
Suckled Veal

Our suckled veal is raised by momma on the pasture, so the meat is tender, rosey, and tasty, imbued with buttery fat.  All cuts are available, including chops at $22/lb and ground at $16/lb.  Open stock at the farm store, Lincoln Center, Union Square, Denville, and Dvoor markets.

We will conduct tours on Saturday and on Sunday at 3 pm.  Come on out and see our lovely herd enjoying the summer breeze at the top of our hill, and try our garden produce, including Jonathan's half-sour pickles!

Classic liverwurst, not the gummy stuff you may have been forced to eat as a kid.

Made with our own beef liver, which is a delicate and sweet as calves' liver, thanks to living the good life. Traditionally seasoned with just salt, pepper and garlic.   Enjoy on our garlic rye, with schmearkase, onions and a beer!

The farm store will be open Saturday & Sunday, 9-5, also on weekdays 12-6, except closed Tuesday.

In addition to our usual assortments of breads, cheeses, and charcuterie, we are also now selling produce from our kitchen garden: cucumbers, green beans, and blue cocoa beans, and Jonathan's half-sour dill pickles.


We've got lots of calves, piggies, and chickens to see on the tours, which are held Saturdays & Sundays at 3 through the summer months.

Classes

 

Jonathan and Nina have planned the entirety of 2014, so you can reserve your space early and get in on all of the fun.  Or give the gift of learning to a lucky friend.  You can gift the actual class, or a gift certificate!

 

We currently offer classes in cheesemaking and baking.  We will be offering classes in charcuterie and other meat preparations during the winter.
