Carrot Cookies with Orange Icing

Metric Ingredient Imperial 250 ml shortening 1 cup 175 ml sugar 3/4 cup 1 egg 1 250 ml cooked carrots, mashed 1 cup 5 ml vanilla 1 tsp 500 ml all purpose flour 2 cup 10 ml baking powder 2 tsp 2 ml salt 1/2 tsp - ORANGE ICING - 50 ml orange juice 4 tbsp 1 grated rind of orange 1 15 ml butter 1 tbsp 300 ml icing sugar 1 1/4 cup

In a large bowl; beat shortening; gradually add sugar, beating until light and fluffy. Add egg, carrots and vanilla, beating well after each addition, In a medium bowl; sift dry ingredients together. Stir into carrot mixture and mix well. Drop by tablespoons onto greased baking sheets. Bake in preheated 350 F (180 C) for about 20 minutes.. Transfer cookies to rack to cool. ICING: In a small bowl; combine juice and orange rind with butter; stir in sifted icing sugar until desired spreading consistency is reached. Serves 8
