Easy Vegetable Stew

Metric Ingredient Imperial 2 potatoes, peeled & cubed 2 2 carrots, peeled & sliced 2 2 ribs celery, sliced 2 2 medium onions, sliced 2 1 large red pepper, cut into strips 1 1 clove garlic, minced 1 1/2 head broccoflower 1/2 225 g mushrooms, sliced 1/2 lb 250 ml chicken broth 1 cup 30 ml fresh dill, chopped 2 tbsp 10 ml salt 2 tsp .5 ml pepper 1/8 tsp

Place all ingredients in large casserole. Cover and bake in preheated 350 F (180 C) for 45 to 60 minutes or until vegetables are soft. Serves 8
