Citrus Sole
Metric Ingredient Imperial
1 kg sole fillets 2 lb
- pepper to taste -
50 ml onion, chopped 1/4 cup
50 ml orange juice 1/4 cup
15 ml fresh parsley, chopped 1 tbsp
1 large orange, peeled & sectioned 1
Season sole with pepper. Place in greased oven proof casserole. Top with onions, orange juice and parlsey. Cover lightly and bake in preheated 350 F (180 C) oven for 20 minutes. Top with orange sections. Bake 5 minutes more or until fish flakes easily with fork.
