Metric Ingredient Imperial 12 fresh asparagus, diced 12 6 fresh mint leaves, chopped 6 170 g white wine vinegar 6 oz 226 g extra virgin olive oil 8 oz 1 red onion, diced 1 2 ripe tomatoes, diced 2 1 yellow pepper, diced 1 2 cloves garlic, minced 2 1 large shallot, minced 1 - salt & pepper to taste -

In a large bowl, combine all ingredients and chill overnight. Serve with pita bread or baguettes. Serves 4
