Chile Broccoli Pasta
Metric Ingredient Imperial
500 ml penne noodles 2 cup
1 medium head broccoli 1
50 ml extra virgin olive oil 1/4 cup
2 large garlic cloves, chopped 2
2 fresh red chiles, seeded & diced 2
8 cherry tomatoes 8
Cook pasta al dente in large pot according to package directions. Remove from heat, drain and rinse with cold water and drain again. Set aside.

Cut broccoli into small florets and cook until tender crisp. Drain, rinse with cold water and drain again.

Heat oil in pan that pasta was cooked in. Add garlic, chiles and tomatoes. Cook over high heat for 1 minute.

Add broccoli to pan with oil and mix well. Cook for 2 minutes to heat through. Add pasta and mix well again. Cook for 1 minute longer.

Serves 4
