Herbed Potato Stew

Metric Ingredient Imperial 30 ml olive oil 2 tbsp 1 medium onion, sliced thinly 1 2 garlic cloves, sliced thinly 2 1 green pepper, seeded & sliced 1 250 ml ripe tomatoes, chopped 1 cup 4 potatoes, peeled & cubed 4 375 ml water 1 1/2 cup - salt & pepper - 10 ml fresh thyme, chopped 2 tsp 1 bay leaf -

Heat oil over medium heat in large heavy pan. Stir in onion, garlic and pepper. Cook for 10 minutes just to soften. Add tomatoes and bring to boil. Reduce heat to simmering and stir until most of liquid has been absorbed. Add potatoes, water, salt, pepper, thyme and bay leaf. Cover pan, reduce heat, and cook gently for 30 minutes or until potatoes are beginning to fall apart. Stir occasionally. Remove pan from heat, discard bay leaf and spoon stew into serving dish. Serves 4
