Baked Zucchini

Metric Ingredient Imperial 4 medium zucchini, sliced lengthwise 4 30 ml olive oil 2 tbsp 115 g mozzarella cheese, thinly sliced 4 oz 2 large tomatoes, seeded & diced 2 10 ml fresh oregano, chopped 2 tsp

Brush zucchini with oil and place on baking sheet. Bake in preheated 400 F (200 C) oven for 10 minutes. Remove from oven.  Arrange slices of cheese on top and sprinkle with tomato and oregano.  Return to oven for 5 minutes or until cheese is melted. Servings: 4
